

The Atkins Diet
The Atkins Diet has a huge following and is based on no more than 20 grams of carbohydrates per day. When it comes to low carb diets, you are best to choose one that is to your liking, though this diet is very popular many find it to low in carbs and just give up, it is important to remember that just because this one has not suited your body type, does not mean that another one won't
we have supplied a few sample menus below, there are now days many low carb diet cook books, and also a wide range of free recipes on the net.we have given just a few here to give you an idea of what kind of food you can expect to eat.
The following foods may be eaten on this diet because they contain no carbs:
Beef, pork, lamb, bacon, venison, veal, ham, lamb, chicken, turkey, quail, duck, goose, cornish hen, pheasant, oysters, tuna, salmon, mussels, clams, squid, shrimp, crab, lobster, herring, sole, trout, flounder, sardines, scrambled eggs, fried eggs, poached eggs, boiled eggs, deviled eggs, fresh/aged cheese, goat cheese, cheddar cheese, swiss cheese, cream cheese, cottage cheese.
You may eat up to 3 cups of the following:
Celery, peppers, cucumber, radishes, lettuce, escarole, olives, mushrooms, bokchoy, endive, parsley, Alfafa sprouts, jimaca, fennel, mache, sorrel, chicory.
You may eat up to 1 cup of the following veggies:
Leeks, scallions, onions, tomatoes, cauliflower, rhubard, kale, eggplant, chard, asparagus, beans, okra, pumpkin, hearts of palm, brussel sprouts, broccoli, snow pea pods, bean sprouts, squash, Dandelion greens.
You must avoid:
Beer & spirits, bread, grains, juice, chips, potatoes, flour, sugar, rice, pasta and cereals.
| | | Absolute Best Meat Loaf | | Ingredients: | 2 lbs ground beef 2 stalks celery 3 eggs 1/2 c Atkins bake mix 1/2 c 3 cheese Italian dressing 1/4 c Worscheshire Sauce 2 Tbls. Dijon mustard Salt (sea salt\'s best) Pepper minced garlic (dried) Italian seasoning Tomato sauce
| | How To Prepare: | Mix everything except the tomato sauce in a lg. bowl. Transfer to a 9x13 pan and cover with foil. Bake at 300 for about 1 hour. Remove from oven and carefully drain grease. Turn oven to 350. Pour tomato sauce on top of meatloaf. Bake uncovered for another 15-30 minutes (ovens vary).
Yummy yummy!! I top mine with sour cream.
| | Preparation Time: | 30 minutes | | Effort (Easy, Average, Difficult): | Easy | Alfredo Beef and Broccoli Bake | | Ingredients: | 1.5lbs lean ground beef 1 cup diced onion 1 can (4oz) sliced mushrooms; drained 1lb bag frozen broccoli flowerettes; thawed 1/2 bottle ragu alfredo sauce salt, pepper and garlic powder to taste extra parmesan cheese for the top | | How To Prepare: | Brown ground beef with onions. Drain if needed. Add salt, pepper and gralic powder to taste then add the mushrooms and broccoli. Cover and let steam for about 5 minutes over medium heat, stiring occasionally. Raise heat to high, pour on alfredo sauce* and let simmer 2-3 minutes to heat through. Top with a sprinkle of parmesan cheese and enjoy! *Note: use as much alfredo as you like. | | How To Prepare: | Combine all ingredients expect lamb. Rub mixture over outside of lamb. Place leg, fat side up, on a rack in a shallow pan. Roast at 400 degrees for 2 hours, or until done to your tastes. | | Number of Servings: | 5 | | Carbs per serving (including complete nutritional information if known): | 5g total | | Effort (Easy, Average, Difficult): | Easy | | Beef Cabbage Rolls | | Ingredients: | 12 large cabbage leaves 1 pound ground beef 1/2 pound bulk sausage 8 oz. saurkraut 1 egg, beaten 1/2 tsp. salt 1/4 tsp. pepper 1/4 tsp. allspice (I used cinammon/nutmeg) 2 Tbsp. onion, chopped | | How To Prepare: | Remove 12 leaves from cabbage. Blanch in boiling water a couple of minutes till limp. (I put the whole cabbage in water - it makes it easier to peel leaves off). Mix ground beef, sausage, egg, saurkraut, onion and spices. For each roll, shape beef mixture into log two inches shorter than the leaf. Place a log inside the leaf lengthwise, fold ends over meat, and fold remaining side so it's a roll. Place rolls, seam side down, in single layer in large, shallow, baking dish. Bake at 350 until meat is done, about an hour to an hour and 15 minutes.
Note: This only made 9 rolls for me, but I like them a little larger. Also, I put extra saurkraut and some canned chopped tomatoes over the top (make sure there is no added sugar). It's a great recipe with saurkraut making the rolls moist inside instead of rice. | | | Crock Pot Meatballs | | Ingredients: | 2 lbs ground beef 2 cups crushed pork rinds (measure before crushing) 2 large eggs 1/4 cup parmesan cheese -- shredded 1/2 cup onion -- finely minced 2 tablespoons worcestershire sauce 1 teaspoon salt and pepper 2 ounces tomato sauce 1/4 cup water
| | How To Prepare: | Mix everything except the tomato sauce and water well. Form into meatballs. Place in crock pot and pour mixed sauce/water over all. Cover and cook on low for 5 hours. (After about 2 hours, gently stir to make sure they don?t all stick together. You may need to remove about to do this without breaking them all up). **I have made these many times, and baked them for 30 minutes first so they don?t put as much fat into the sauce.
| | 19g carbs total | | | Easy | | Creamy Mushroom Steaks | | Ingredients: | 2 pounds beef top loin steaks -- cut into 4 or 6 pieces 1 Tablespoon butter 1 each red bell pepper -- cut into strips 1 each green bell pepper -- cut into strips Sauce 1/2 pound fresh mushrooms -- sliced 2 Tablespoons butter 3 tablespoons onion -- chopped 1 cup heavy cream 1 cup water 2 teaspoons soy sauce 1 each salt and pepper -- to taste
| | How To Prepare: | Saute sliced mushrooms in butter until slightly browned. Add in onions and saute for 3 minutes. Add remaining ingredients and let simmer, uncovered, until slightly thikened(you can whisk in 1-2 T soy flour that has been dissolved in 1/4 cup water if desired for a thicker sauce). Fry steaks in remaining butter for 2 minutes each side. Remove and stir fry pepper strips for 2 minutes. Add steaks and sauce back in and simmer 10 minutes or until steaks are at desired doneness.

2 cups cauliflower florets 2 T. butter 1/8 cup heavy cream | | How To Prepare: | Make mashed fauxtato topping by boiling cauliflower until soft. Drain thoroughly, then add butter, desired seasonings and heavy cream. Whip until they become a "mashed potato-like" consistency.
Fry ground beef in a pan until done. Drain off grease and set aside.
Cook green beans until tender.
Layer green beans at the bottom of a small casserole dish. Next add ground beef, covering the green beans. Top with whipped cauliflower.
Bake at 400 for 15 minutes.
